What I suggest is a fourth option: Saliva only. This way means that the player can't get infected with scratches, only bites.

The only hint of zombification is through moodies, but its a bit of a mixed signal too. Its unfortunate that your run ended as such. Alternatively just set pop multiplier to 0.75, that would be inbetween normal and low. Normal respawn time is 72 ingame hours. Enable mutli swing, change ranged weapons and fresh food to extremely rare. Leave zombie settings as is. Change clothing degradation to slow. quick tip is to grab a blunt weapon and sneak towards zombies.
