I have played both assetto Corsa and assetto Corsa competitizione on series X with a wheel and have had no problems. Possibly try uninstalling it and reinstalling it. Where you able to make it work? I have the same issue I can not use the g920 on AC on Xbox series x.

A day or two ago, I received an automatic update for Steam/Asset to Corsa. Now I find that my G920 steering is not working well. I am turning almost 900° lock-lock to avoid hitting the out-lap wall in Spa. I've tried reducing my settings in Logitech Gaming Software to 200° and 20% centering power. I can't find any [in game] settings in AC.

From my knowledge, a LUT essentially is designed to allow a program to take an input, and give an output based on that. For example, Assetto Corsa uses LUTs in almost every aspect of their cars pertaining to suspensions, and even the engines, MGU-K, and turbos. This is also very useful for pre calculating physics variables for performance reasons.
